You know, it’s funny how long to cook salmon in the oven is. I used to simply throw this salmon on the grill when it was in a little brine and off we went. You might even choose to leave the chunks whole.
Next, preheat your oven to the correct temperature. Using a meat thermometer is a good way to determine the right temperature. If you’re cooking small pieces of salmon, basting it frequently with a cooking spray while it cooks will help it maintain its shape while in cooking. Cooked salmon can be served immediately or put in the oven until it is done, flipping it once halfway through.
Allow the salmon to dry in the oven. Depending on the size of the pieces, this can take anywhere from one to three hours, but it will finish drying in the same amount of time.
When it is done, check it. It should be ready to eat. Serve it warm if you prefer. It can also be served in cold salads or served on the grill.
As a side note, if you don’t have a top rack for your oven, place the salmon on the bottom rack and turn it regularly so that the moisture will evaporate quickly. This helps retain the moisture for an extended period of time so that the fish stays moist. How long you cook it in the oven will depend on what you like it to be cooked for. Personally, I like mine to be rare, so I usually go in two hours. Others, like myself, love their salmon-pink as it’s simply the way they like it and enjoy the dish more.
